Where It All Began:





Picture this... the resounding applause as Tom Hitchcock is awarded the prestigious title of Australia's Chef of the Year for 2023. It's a moment of immense pride and recognition, not just for Tom but for our entire team at Spirit House.





Tom's scientist-like approach to food and cooking naturally flowed into the 'lab' (AKA: the private kitchen in our Hong Sa Bar), where his experimentation and creation of traditional recipes and global techniques began to flourish.





It wasn't enough to just create and admire, food innovation of this level deserves a place to be shared and shine.

So, rather than basking in the glow of this remarkable achievement, Tom's mind remains constantly buzzing with new ideas and adaptations of classic dishes, waiting to be unleashed and shared with Spirit House lovers and food explorers from all walks.





What Exactly is a Chef's Table?





Enter the Chef's Table - a concept that elevates a dining experience to new heights of sophistication and innovation. At our Chef's Table events, guests are invited to an intimate gathering in our Hong Sa Bar's private dining room, limited to just 18 seats per night.





Here, amidst a lively, personalised atmosphere of exclusivity and anticipation, diners are treated to an extraordinary 8-course menu meticulously curated by Chef Tom Hitchcock himself.





The Chef's Table concept is not just about serving exceptional food; it's about creating a experience that transcends the ordinary - a 'performance', if you will. It's a platform for Hitchcock and his team to push the boundaries of flavour, technique, and creativity.





Each dish is a labor of love, crafted with precision and passion to delight the senses and ignite the imagination.





The Menu:





Ah, the menu - the heart and soul of the Chef's Table experience. With Chef Tom's insatiable appetite for food exploration and innovation, each dish promises to be a revelation in itself.





The event works around being a tantalising blend of mystery and revelation. The menu, carefully crafted by Chef Hitchcock and his talented team, remains a closely guarded secret until the night of the event.





Drawing inspiration from travelling Asia, revelling in traditional cookbooks, and pushing the boundaries of Asian cuisine - Chef Hitchcock is poised to showcase an enticing array of reimagined Asian classics infused with his signature flair and creativity.





This works out to be about 14 dishes served over 8 courses.

Given the nature of this improvisation, our Chef's Table events are unable to cater to any dietary requirements or allergies. Chef Hitchcock's mind holds the power and is a treasure chest that we don't have the keys to...





Guests are encouraged to join us with open minds, empty bellies, and a curiosity for how far Asian food can go.





How It Works:





So, how does the Chef's Table experience unfold? Good question.





As each course is presented, guests are treated to a symphony of flavours and beauty. With perfectly accompanying paired wines, our guests have had nothing short of a memorable night as Hitchcock stands table side to walk through the inspiration, process, and ideation behind his dishes.





Guests join us at 6pm for a welcome drink in the beautiful Balinese courtyard of our private dining room. After a chance to liaise and settle in, everyone is escorted to the dining room where the show begins and runs until about 10pm.





If the food, wine, and surroundings wasn't enough, we'll win you over with Chef Hitchcock's presence on the night for exclusive insight into the mind of unique culinary perspectives.
